BUTTERY CRUNCHY LEMON VANILLA CORNMEAL SHORTBREAD COOKIES @ BWD

 Buttery and Crunchy together , specially in a shortbread spells pure Joy and happy smiles for me.
Specially more so if they happen to be in Shortbread.
Fair Warning , before ya says , oh no , lemme say , oh yes , there are hearts happening here yet again & i have my baking paraphernalia  to blame for that and happily so...

My fondness for shortbread shines with these and was enlivened when  Rivki  chose these for Baking along for our group Baking with Dorie with these....
Rubbing Zest into sugar , specially Vanilla sugar makes things even more fragrant and the addition of jus a hint of Almond extract , notches flavours to a delightful and heady love ...love for shortbread and all things shortbread.......

U MUST scoop out some butter as it beats with the sugar and the flavours , with the tip of ur little (or middle for dat matter , doesnt matter as long as u do it) , and indulge in how yummy it is and how good a Shortbread this one is going to be.
 And i must , must ,must talk about the crunch , the amazing crunch , that comes from the cornmeal , that also adds texture to the bite which is soo good and welcome.

There is also a crunch with the slow baking that goes on (i baked them @140 c , till lightly golden and some @ 160 c till browned) and yeah its sandy ,melt in ur mouth shortbread after all.
 
The addition of Cornstarch in these sure adds to the crunch am sure ...

2 hearts.....2 hearts that beat as one...(please do sing along as u join me for shortbread and coffee , or maybe , maybe milk or hot chocolate)

Ya ya ya , u heard rite , these are chocolate filled Lemon Cornmeal Vanilla Shortbread cookies....Oh arent they so good!...

~~~rubbing zest as well as a scrapped vanilla bean ( n i really never tire of repeating this) make things so fragrant and yeah i did add in the almond extract too.
~~~patting the dough into a rectangle and then refrigerating before i cut out cookies the next day simply makes things easier for me.
~~~Baking at 160 C gave me browner cookies and @ 130 C - 140 C gave me lovely cream , jus turning golden , melt in ur mouth crunchy cookies , but then my oven does brown real fast i must repeat.
~~~drizzling with some melted chocolate (milk and dark) with vanilla and almond extract added to it , along with butter and canola oil completes my cookie. 
I believe Nutella would make a fine pairing too.
~~~Adding some vanilla sea salt is something i love and did , but a light sprinkle of lavender or saffron , atop the delicate cookies would make them perfect for afternoon tea's.

And if u still here , i say , please do go and mix the dough for these , i know u have everything in ur pantry and if u like eggless , this is an eggless shortbread recipe.
+ if u cut it into squares as the recipe calls for , u might jus go a tad faster.
