A cake that's so buttery and pound like with lods of vanilla topped with orangey goodness and if that aint enough there is a nice orange vanilla buttery drizzle atop the little loafs before u top them with melted chocolate.
Some home made orange candied peel and sprinkles and u have a cute little Jaffa cake at hand to snack on or wolf down :-)
Besides all u need to do is dump all the ingredients @ stand mixer and whisk away till nice , smooth ,light and fluffy ( did a bit differently but for convenience more than anything else).
Kimberly's blog made me feel even more romantic than i already am , i dont know if it was about her wedding or the mexican wedding cookies , but make me feel the love some more she sure did and once again i was so happy with my pairing @ Secret Recipe Club.
Kimberly aint just into but crafts too and i love she day dreams about moving to a beach , specially since i live in a land of beaches , with a beach less than 5mins away from home.
Walks in the evening never got better.
Though i so wanted to bake the wedding cookies , i promised someone to bake this cake for them today and i sure did.
U know for this cake , u just need to dump all the ingredients into the bowl of ur stand mixer and whisk till everything is so fragrant , smooth , light and fluffy.
I did begin with the butter , sugar and 3 whole , yes 3 whole vanilla beans scrapped in though , but was only coz i was putting together the rest of the stuff.
I did increase the the orange juice to 1/4 cup + 3 tbh , as well as added in lots of zest coz i wanted a pronounced orangey flavour that i knew would pair beautifully with the chocolate.
And with so easy a 1 bowl recipe u get something as good as a buttery pound cake , excellente.
The cake is super soft , moist and absolutely flavourful
THE DRIZZLE leaves u wanting more and more........
When u simmer the orange juice with some vanilla sugar , u know ur doing something right as the fresh fragrance calls out to u.
And then when u add a blob of salted butter into the drizzling syrup , u know u doing something very very very right.
Just make things better and dont forget i scraped in a nice big fat vanilla bean in there too.
When u get to the chocolate topping ur so excited about this cake coming together so beautiful that things just fall into their delicious places.
I topped these with home made orange rind though honestly i think fresh oranges would be even better.
Baked them into mini loaves coz i think they are cuteee.
And i love how well they rose, with a nice cut in the middle,again like a pound cake.
Jaffa Drizzle Cake
Cake Ingredients
140g butter, softened
2 tsp orange zest
3 whole vanilla beans scrapped beans
200g self-raising (ie, rising)
200g golden caster sugar
1 1/2 teaspoons baking powder
3 large eggs
7tablespoons milk
1/4 cup + 3 tbh sweet orange juice

Heat oven to 350°. Butter the base and sides of a loaf pan.(1.5 litres or 3 mini ones )
Put all the cake ingredients into a bowl of ur stand mixer and beat until smooth ,light and fluffy.
This would be real quick if u have a kitchen aid but could take almost 10 mins or more in a normal stand mixer.
Spoon the mix into the pan and level the top.
Bake for 30 to 40 minutes or until golden brown and firm to the touch.
Drizzle the orange syrup (recipe below) in the loaf pans itself and let it cool there.
The syrup gets nicely absorbed into the cake.
Once cooled turn out from pans and pour melted chocolate (below)
orange drizzle Ingredients:
70g vanilla caster sugar
1/4 cup orange juice
vanilla bean
big fat blob of salted butter
simmer the first 3 over a slow fire, stirring a bit here & there till nice ,bubbly , fragrant and the sugar dissolves.
Whisk in a nice big fat blob of salted butter (optional but very very good)
It will be on the thicker side and will get thicker as it cools
chocolate topping
125g dark chocolate
1 tsp canola oil
1 tsp salted butter
vanilla extract
Melt everything in the microwave till smooth and glossy.
If u chose to , u can melt only chocolate , of ur choice and leave out the rest.
As i said super moist and soft , very very falvourful ....
Would love to try Jaffa Cupcakes with orange jelly centres , i think they would rock.
