MADAGASCAR VANILLA BEAN RED VELVET LINZER HEARTS WHOOPIE PIES @BAKED SUNDAY MORNINGS

The whole place ,and more so the open kitchen , smells like cake right now.....ok Chocolate cake ....doesnt that sound good?
Wait wait....Red Velvet Chocolate cake....ahh better???
I think i can call these a cookie cake , and this is the first time i am  ever enjoying one or eating one coz there are no whoopie pies that happen here.
Ok ok heart shaped linzer Red Velvet Whoppie pies,  with Marshmallow fluff filling......now now , that is what completes the pic!
This should be there at every wedding , maybe on a lolly stick , but they should be there for sure.
Coz they are like a wedding , when 2 become one , here 2 whoopie pie singles , come together to make one deliciously cute whoopie pie.

This is my first post for Baked Sunday Mornings , where we are baking our way thru the new BAked +no rules, always a +, its also the first time ever im biting into a whoopie pie , so honestly i have no nostalgic memories of this one , but have been looking forward to a whoopie pie , so its a post of all firsts happening here.

They were lovely , the chocolaty flavor so good, with Vanilla making it better , i thought espresso would bring it out more , but than that would not be a red velvet than no?

The reason i chose the Marshmallo fluff filling , from the whoopie pie pan box, is coz ,as far as i know, thats what goes into whoopie pies , and i so wanted that.

I love Linzer cookies ,and Faith , a sweet and dear friend has these linzer cupcake up , ever since ,everything i bake , i want to make them Linzer.
Oh yes , there will be cupcake too:-)
And Linzer = piping some more fluffy filling in the cut out , detailed pics below...

And these are the CupCake Red Velvet Whoopie Pies, oh yeah , hearts...and there are some more below..


Its pretty easy +comes together real quick too.
U begin with the usual , getting together , all the dry ingredients in a nice large bowl ,and if its pink and heart shaped , it'll make u smile too ....
There is flour , baking soda+powder, salt in there...
Ahh and yes , cant forget ,Valrhona dark chocolate is absolutely wonderful...
 NExt u whisk the wet ingredients , ie the canola oil and buttermilk .
Now i use the powdered buttermilk powder coz i have enough stock of that , but actually u add the buttermilk powder to the dry ingredients and water in place of wet , but here is re constituted the buttermilk with the water , and whisked with the canola oil.
Why? No reason , more often than not , i go with the flow!
A sure couldn resist adding a whole Madagascar bourbon Vanilla bean , innards, to the butter +shortening , that too , i halved the recipe.
Here is the butter , with jus a wee bit of shortening , creamed till smooth.
And thats when u add the sugar's.
A slight tweak here , i added light Brown sugar instead of dark brown , and added 1/4cup tightly packed light brown adnd 1/4th cup castor sugar , ie coz i halved the recipe and this made it easier.
Oh look at the creamy mix , thats everything well beaten for 5mins and thats when u add an egg , a small egg , around 37 grams , coz the full recipe calls for a large one ,which might be around 56 grams or more , i thought this was ok for half the recipe.
And yes , we do get eggs that small , most of our eggs , come from home grown , free range chickens, who are pets more than anything , so they are like organic , free range eggs , with a nice yellow yolk and many a times , we get those tiny little ones.
And once the egg is beaten well , u add in the color , i added gel color , so jus added what i thought was right (never mind if i wasnt).....
And the color i added was Wiltons Christmas red color gel,(honestly its more pink than red, dunno why its called Christmas red, for real red , i prefer Americolor), and i dunno if 1/2 tbh of color was a lot or no , anyway i didn measure how much i added in...
Beat it in...isnt that nice and red ...or is it pink , never mind , its nice!
Now u need to alternately add flour and the buttermilk oil duo , in 3 additions , beginning and ending with flour, well i had an extra addition to finish it with flour.
And ready to go in the freezer for 10 mins , i think this is needed so it doesnt spread too muc (dis is what i think , i dont know if its a fact yet), i might have not needed this step coz i am using a pan here , but yet i went right ahead and placed it in the freezer for sometime.
Using a 2tbh cookie scoop , made it easy to scoop in the batter into the heart shaped WP pan...
And then i leveled it with a Spatula , i should have left half without leveling , i thinking if i had done that , i would have got a slight mound there.
Place on a baking tray and in that goes....
And if u have some batter left , i did, look out for some more heart molds , to bake them in...
Pop that in the oven too....
These Cupcake Whoopie Pies , are absoutely soft and moist, right outa the oven , and when cooled  they get just the whoopie pie texture....
And while all the baking happens , time to run some warm water and lather up , remember we have dishes too....and yeah i'll fix u some Vanilla coffee.
FULL RECIPE FOR THE RED VELVET WHOOPIE PIES HERE
MARSHMALLOW FLUFF DREAMY FILLING
Cream 4 tbh butter (around 60 grams or 2.5 oz) i used salted butter, with vanilla bean paste or extract + clear butter extract(optional)
Add 1/2 cup confectioners sugar and pinch of salt and beat till smooth and creamy.
Add 3 ounces marshmallow fluff and beat till well blended and smooth.
Pipe or spread on one cookie cake and sandwhich.

I piped in the fluff filling for the W .pies...

I cut out 1 set oh whoopie pie's as u would for a linzer cookie , with a heart cookie cutter , and then sandwiched them together , this way to get to pipe in another star atop:-)

 To say that i fell in lovee with these is to say the least.I cant get them off my mind and still deliciously think of that First loveee bite , when i jus got these outa the oven!
I was sad i halved the recipe and i shared them with none , except with family (am safe there coz they arent high on sweets )
As i said above , this is also the first time im baking these and also my first post with Baked :-)
Every morn , since those whoopie pies i crave for them with my coffee.
I wonder why i didn bake these before (oh we find no whoopie pies out here) and well they are heart shaped ....so some more love there....
