Light and airy , and so very easy .....Oh Muffins these are ...Coffee break Muffins in a little coffee cup +minis....
Out of the oven , warm , with a nice smear of Nutella and topped with a cranberry and Macadamia and a sprinkle of cinnamon , these were jus in time for the coffee break.

I am loving the muffin chapter in Baking w Dorie and GrapeFruit , the founder of this wonderful group , did better , by choosing this wonderful muffin.
These were good , right outa the oven , warm and fresh , jus right for ur coffee...Oh coffee..
That they come together really fast is another plus point...

Living up to the name i begin with Coffee, nice strong espresso coffee, freshly brewed...aroma so comforting and good...
Yeah , its my very fav , all time Fav coffee , besides the Colombia Supremo Gourmet Coffee that comes with the bodum french press...
And melt the butter in a batter bowl , coz it needs to cool while to get going the rest.The quantities are all halved here :-)
U being by mixing all the dry ingredients first , and what i did was use KAf unbleached AP flour , but replaced 2 tbh from the cup and added cornflour =cake flour= makes a tender muffin= happy u.
So thats the line of assembly , the flour , the sugars, yeah u mix them there , lods of Cinnamon and added in some all spice too.
Even though i used salted butter , i did add a wee pinch of salt too!
By the way , are'nt my heart metal measuring cups soooo cuteeeeeeee....
I was going to whisk when i fell in love with the brown sugar heart and so wanted to capture it too....
Oh yeah , we are still at the whisking , dont let this fool u in to thinking that this takes time to put together , coz it doesnt , its really fast , even with all my pic taking...So there is some nice instant Espresso that goes into the batter too , u dont have it ,no problem , im sure any instant coffee will work as well.
SO finally , we have all the dry ingredients whisked together and ready....
i take a break ( oh yeah i have some coffee there all the time when i m baking , its as good as having my music while i bake), to gaze at the pretty muffin papers and line pink trays..
I had begum thinking this will be a Red Theme here , see , how i slowly creeped in the pink in , i know ....
I know i can nevr have enough of pink , and i know there are lods who come in here and fall in loveee with pink too , and i love to read about that, makes me sound so influential , ha ha , in a good way ok....
Now lets get back to the cooled butter , i begin with breaking a little egg in there , the recipe calls for a large egg , since i halved the egg , i add in a small one :-)
And take ur cup of coffee , half here , and ...
Pour it in ...yeah thats righ , make sure u brewed extra to have some to drink ...
Adding all sorts of Vanilla's to make the flavor deeper....i always end up adding lods of Vanilla coz i love an overload of vanilla....
Whisk it all well...
And fold in the dry mixture with a spatula , its better to have a lumpy batter than an overmixed one , Dorie whispers in my ear and i listen....
Use a cookie scoop , pink is always preferred here , to scoop in the muffin molds and there u go.....
Bake to delightful times....while u do the dishes ,which i loveeee........that will also assure u dont open the oven door to see all the exciting baking happening there.

Nutella Frosting

3tbh Nutella
20grams butter(salted is so good)
1tsp canola oil
Melt Nutella with butter ,(10grams) jus enough to make it right , salted butter is good, and some Canola in the microwave. add the remaining 10 grams of butter, to get it nice and glossy and frost the muffins , thick or thin.
If u are gng to pipe the Nutella , dont add more butter , if ur jus going to spread it or fill a tart , u sure can.
