This is my first week with Baking With Dorie, and this weeks Pumpkin Muffins [pg 15] are picked by Elizabeth of Gluten Free baking and u will find the gluten free version at her blog!

Baking with Dorie is started by Grapefruit of Needful things, i love she started this group and best parts the participation is totally relaxed, + only twice a month, if u have to bake every recipe!

Happy Birthday Dorie, am thrilled with the happy coincidence that baked these delicious muffins today!
This is the first time i am baking with Pumpkin and ,honestly these, almost buttery muffins, are everything u'd want in a muffin , im excited even writing about these now, they are moist , bursting with all the flavors,soft , and delicious ,whether with a spot of Apricot Jam or otherwise!!
If making pumpkin Puree at home aint ur thing , think again!!
Why, first u get to gaze at these pretty pumpkins, right in ur world!
You get to get creative, [very soon]
All u need to do is scoop the innards,
Wash them well , very very well...see how nice and shiny it is....
and clean..
chop it to fit your steamer or boiling pot , brush with some sugar and place in the pot!
Skin side top, steam /boil till done!And scoop the nicely steamed flesh!!
And bring out the blender to puree [u will see how pretty the puree looks below].
While thats at work , chop some more pumpkin, and lods of greens ,onions,toms and what to put in another pot where u'll get an absolutely delish veggie for dinner!
Ok , go easy, it s hot, place it in a plate to cool it abit, so u can easily scoop out the pulp!
Since the soup Canja de galinha was simmering too, some pulp went into too!
Hah, u can bake it too,bdw, brush with some honey and bake till reallyyy soft!!
Cling wrap and regfrigerate, u now have a major ingredient ready to bake ur pumpkin muffins the next day!!
Moist soft Muffins!!
Finish up ur breakfast and lets begin whisking together the flour, baking soda, baking powder and spices in a bowl!
and if it happens to be Sunday, fix ur brunch or lunch first or else these will disappear in a moment!
With Grated cinnamon....
lods of freshly grated cinnamon...clove and cardomon were the spices i used!!
Instead of ginger and all spice!!
Lemon zest and lavender would be so good too, or maybe i think everything lavender ever since i recvd some...
And u need to add buttermilk powder to the dry mix too , coz i use buttermilk powder and when its time to add buttermilk to the batter, add water , hot water, lightens the cake too!
I was very excited to use some light brown Muscovado SUgar,Oh the flavours....Natural Light brown Muscavado sugar, soft and fine grained , with a distinctive creamy fudge flavor!
Add the sugars, white sugar with light brown muscavado sugar, beating into unsalted butter @room temp till soft!
Ahh, added 2 tbh Canola oil too , oil= soft!
When light and smooth , add an egg , and if u have to add another , u beat the first one well till well incorporated, i didn coz i halved the recipe [ to get 12 muffins]!
Then beat in some Vanilla , the best u can find, else a nice plump bean!
And then there is something else i added too ,LorAnn's Princess Cake and Cookie Emulsion , its citrusy and almondy and smells of everything nice!!
[hang on there, im giving one bottle of this away too]
Add in the Luscious Pumpkin puree, with pride, its made from Scratch remember!!
And some hot water , remember i already added the buttermilk powder to the dry mix..
Now fold in the dry mix into the already gorgeous batter....
And lastly fold in the add ins, plump golden raisins, walnuts , few hazelnuts and pistas and yeah Poppy seeds....
I have been wanting to add these to cake ever since i got them in my pantry , why am i gushing, its a difficult find here, and am very thrilled with these!
Bdw, i added some instant Espresso powder to the batter too..
And quickly begin filling in the muffin sheet, some with a nice scoop of Apricot Jelly...
A nice Biggg Spot of Apricot jelly [ oh my ,i am already excited thinking about breakfast tomo!]
A good sprinkling of some Light brown Muscovado sugar and Sunflower seeds...
Ready to go into the hot oven....
And Ready......
Ahh , i must tell u about a salted butter Frosting , melting salted butter, add some icing sugar , a bit of instant espresso ,maple syrup and Vanilla....absolutely delish.....
I want to call it salted Butter Frosting....actually its an absolutely delish buttercream, dat sets as it cools and really sets well..
Or maybe Salted butter,Maple Espresso Frosting...
And if the Muffins , are hot, it will first melt atop , and then set as it cools...
A plate full of Muffins...
There is only one complain though, i dont get that bump top, is it coz i fill the cups too muc???, or what???...tips please........
The texture, soft and moist and bursting with flavor and absolutely delish...
