INDONESIAN HONEY GINGER CHICKEN AT INA'S GARDEN



I had to add the honey to the tittle of this very flavour full chicken coz it sure plays a wonderfully sweet role in this chicken.
I mean jus 5 ingredients ,including the chicken , and all u need to do is marinate the chicken overnight , and pop it in the oven the next morn for a delicious treat.

The recipe sure calls for quartered pieces of  a whole chicken but i missed that part and had already kept these pieces ready so i went right ahead with the recipe.
The ground ginger and garlic along with the soy work its magic overnight and the honey ....well the honey sure does too....

I think all the glaze is coz of the honey , and the sauce is rich and dark brown.
I used my fav sweet soy sauce but u can use any one u like and a sprinkle of pepper would be great too though we all loved it the way it was.

Ahh, shrimps ...when i say i love sea food , i always mean shrimps (unless its oysters and clams am referring to) , so i went right ahead and marinated some shrimps too.
 
And am sooo glad i did , the marinade mixing with the juicy juices of the shrimps gives u a good lunch with some lettuce and green onion ...
Actually lodsa mixed lettuce and greens of spring onions is more like it..
 
 And then get really soft and tender and absolutely succulent with all the marinating and baking....

Drizzling jus a bit of sesame oil atop a few of these gives them a nice twist too...



Green peas , yeah i love Green peas and added them to the marinade too for a good side.

And not jus coz they have a low GI ,  but i am glad that something this yummy on my platter has a low GI (talking about low GI i am simply ignoring all these Hersheys kisses am popping in right now)

RECIPE

Ingredients

    1 cup honey
    3/4 cup soy sauce (sweet soy sauce or jus about any soy sauce)
    1/4 cup minced garlic (8 to 12 cloves or a whole onion unpeeled :-) )
    1/2 cup peeled and grated fresh ginger root
    2 (3 1/2 pound) chickens, quartered, with backs removed (or jus pieces as i did)

NOTES 
go right ahead and marinate any meat u want here.
Adding peas is great and i think potatoes will go really well too.
Am sure a wee bit of spice , like pepper or a dry red chilly or even 5 spice powder will go really well with this one .

Directions

Cook the honey, soy sauce, garlic, and ginger root in a small saucepan over low heat until the honey is melted. 
Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce.
Cover the pan tightly with aluminum foil. 
Marinate overnight in the refrigerator.

Preheat the oven to 350 degrees F.

Place the baking pan in the oven and bake for 30 minutes.
Uncover the pan, turn the chicken skin side up, and raise the temperature to 375 degrees F.
Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.
Isnt that soooo easy peasy and delicously so ????
i read somewhere that u sure need to double this recipe coz the leftovers are yummy and if u dont double u wont have any leftovers :-)
