@FRENCH SABLES♥BUTTERY SHORTBREAD♥MANY WAYS♥jus for Christmas Time!

Buttery makes u happy...buttery makes u gay....and buttery brightens ur day!

Specially at Christmas time , buttery makes me smile.
 
So here we have buttery melt in ur mouth sables  ie french shortbread , many ways ,jus for u and me at Christmas time.
Do i really have ur attention now:-)
And we have the cutest little tarts in Christmas shapes , filled with caramel and chocolate and cookies galore.

Laurie chose Sables @ Baking with Dorie  ,this month , perfecto i thought, and so in time!

And then something else happenned , i checked in Have the Cake , a group i joined a bit ago , and there is shortbread happening there too , and i so wanted to catch up , and here are these buttery Sables.

Well , they add on to 2 of my baking groups , they are so good at Christmas time , with all these cookie cutters , and if that aint enough they are French and buttery.....
 And oh so soft and melty {melt in ur mouth}
They bake beautiful ,are tender and fill ur home with the frangrance of buttery goodness u will love.

They are good rite outa the oven {careful:hot}, and when cooled.



They need no frosting and stand beautifully on their own.

And there is sooo muc u can to t play around and make it ur own.
A winner every side, u will love these , i say.

This one was more like a star bar, like a layer of buttery shortbread {i know u must have noticed by now how muc i love the word buttery,and i used salted butter by the way}, a layer of caramel, and a layer of chocolate,u cant go wrong here!

And oh so good to play around, lemme begin sooonnn and show u all the fun i had....so u can have some too.....

I dont have step step pics to the dough coz i brought it together at night and all our energy saver lites are warm daylite , = yellow ,so no nite pics:-)
Its one of the easiest doughs , a little soft to handle , but still fast and easy.
You begin by beating butter at room temp , oh so good i tell u, i mean butter ,sugar , flour , a bakers fav ,come together to create some deliciousness galore!
How good is that!!

One thing though , though halve the recipe , i did , and realized how little it would be to bring this all together and had to bring together a second batch immdtly!


After sitting and improving in the refrigeration over night ,i get working again.

Getting ready to bake m here are my lightly spiced,home made, vanilla sugar jars , they make wonderful little gifts ,dont they?

Tie a few pretty ribbons and ur ready to go!!
Sanding sugar , one i jus recieved in time from my dear pal Chaya, {thannnxx a ton babe}, i had none and that prompted me to make my own and jus in time her Christmas parcel arrived{more on that late} ,oh im in lovee with sanding sugar now.
For those who cant find sanding sugar at the stores make ur own here.
Yeah we need eggs too, love these little local eggs , well yeah they are organic too!
Coz the yellow will be soon used as a glue , i 'll tell u for what , first lemme tell u about this cute egg separator , i use it coz its cute kinda , not coz i need it.

I whisked it with this super cute mini whisk , i did keep the heart one , but this one is so cute to whisk an egg yolk and does the job well too!
Ahh , my new fav nut Macadamia and Azar nuts has the best ! Dry roasted and unsalted and super fresh and comes in a resealable bag , this is how good it gets!
 and this KA food pro chopper makes choppin nuts a dream...and then there is a little lid where u can store the leftovers , i think it will be so good chocolate too!
Now this really makes things , easy , cut 3 strips of parchment paper , or any number of them , ie the number of sugars or nuts u will use.and place the sugar/s in the parchment paper.
I cut my roll into 3, i had 3 sugars there!
Brush with the yellow of the egg , whisked and roll around till its nicely covered and slice as desired.But remember these are very tender ,not to forget melt in ur mouth, so not very thin,thicker the better.
next is my lightly spiced Vanilla sugar mixed with the chopped nuts...
Repeat again , brush with the yellow and roll around...
And saved the best for last , sanding sugar is the best! All thannxx to my dear buddy Chaya, i got this jar jus in time , i had none and had to make my own and there her parcel arrived and i had a nice big fat jar ,that will sure last me to valentines:-)
 Yeah i flattened half the dough too:-)so i got Christmas cut outs too!

 Tray number 1 ready to be baked...

And i didn re roll the dough , i pressed , the now already soft scrapes into these cute buttered,silicone molds and u will know in a bit what i filled in there!
and filled the bases with the left Vanilla sugar and chopped nuts.

 And i had fun with these to fill those shortbread tarts, oh sooo good!!{recipe below}

~~~Mia's Tips Picked from Dorie n reading around~~~

**The butter need to be at room temperature ,not oily soft. I used salted butter and loved it.
**Beat butter , then with sugars and then with egg yolk , till smooth and creamy ,not airy.
**I add the flour and instead of switching on the mixer and have flour flying around , fold it in well with a spatula , and then run the mixer if need be.
**this dough doesnt come together and it shouldn come together, and is very soft.
I turned it on to a cling film , lightly dusted with flour, dusted my hands with flour too , and worked to flatten it to the desired thickness and then cling wraped and placed  in a flat tupperware.
**to make the roll, i cut out a cardboard from a silver foil roll , in the middle and cut it to desired lenght as shown below , had shaped it first and the roll made it easier.
A kitchen roll would work better.
**Refrigerate for atleast 2hours or more , i did overnight and a few hours, it improves flavor.
**Work with the dough Cold , its gets soft pretty quick.
**Cut slices with a sharp pairing knife.
** Dont have very large or very thing cookies , they break easily and DONT pick from the tray till u cool them there a bit , i broke my most beautiful large cookie.
and when u do pick them , use a large cookie spatula , i broke another one when i was dancing around with it while clicking pictures ,and i have 2 cookie spatulas mind u...
**I baked them at a very low temp , for a lonnnggg time , gives me a crunchy crispy cookie+melt in the mouth.
For French Short Bread /Sable recipe

For Caramel Filling 
Microwave around 10 kraft caramel with 3tbh lite cream, vanilla and some rum from my christmas fruits.
stir inbetween till melted and smooth.
scoop into baked shortbread tarts and bake again till a little set and let rest in the warm oven.
a pinch of sea salt or vanilla fleur de sel , is optional ,but oh so good!

For Chocolate 
Melted milk chocolate chips with some canola oil ,till smooth , u can add some salted butter , i did , as well as some sea salt , i did!
So here too ,a pinch of sea salt or vanilla fleur de sel , is optional ,but oh so good!

And go Nutella For some.....
 
Cover the caramel layer and let set @ room temp.

Decorate the chocolate with chopped nuts{optional but fantastic}, and snowy vanilla sugar.

Variations.
*Fill with butterscotch/peanut butter/cinnamon chips melted and cover with white/milk.dark chocolate.
*Ur fav fruit filling will be fantastic too.
*Or a ground nut or marzipan filling.
*or saffron honey cream , oh the sky is ur limit!

Variations for Sables.
*Add lemon zest/lavender/hazelnut oil/almond oil/orange zest/vanilla/ur fav spices while creaming the butter for a fantastic flavoured Sable.
*Instead of colored sugar u can roll the cookies in cinnamon sugar or cardamon sugar, saffron sugar anyone??
*add a few of ur fav chopped nuts for a crunchy texture.
* cacao nibs would be oh so perfect too.
All of them , Sable tarts filled with Choco(nutella) Caramel or the cookies , were simply fantastic...Sandy , a good sandy , tender and oh so melt in ur mouth!
Jus some buttery goodness , with ur Vanilla Cinnamon Coffee , i love....
 Or with warm apple cider...fantastic....
Butter , sugar ,flour with some egg , creates delicious moments again...
