FOR some its Spring....for some its Summer ....but to us all its MOTHERS DAY CHEER......
My first memories begin with u,whether its when i conceived or as i Grew!
The love so intense, nothing can replace, the gift of Life u gave me, has created a path for my lifetime, that brings nothing but smiles , joy and glee!!
Oh how muc i love u, oh how muc i do.....
I can think not of a single day without u.............
I thank God for u and for all the precious moments with u.....
Ur smile ,ur hugs ...they rock my life................
Moments of ''us'' have me swell, whether its sitting on ur lap relishing my foodie instincts, venturing into ur loves of home farming, rearing and cooking ......to our shopping trips, sharing giggles at d coffee shop,as that guy gives the look.................or jus lying in bed,with nobody home,close to each other never to let go..............
I dont know what its to have a child [though being with u makes me feel i do!] ,and i havent walked the aisle , but u my mom , Knowing u and the excited joyfullness between us, i know its a dream.....a very Happy sunshine dream ...............
Mom ,this is for u and i so want to say, this time ,to me ur my Princess and Queen rolled into 1, my most adorable and bestest mother ....Love u forever...............
Mothers day ....can the love of a mother be limited to Mothers Day, oh no, and we all know that, i do too and for me its Mothers Day * 365, yet i Love Mothers Day!
Maybe the Pink Candy floss in me ,finds it romantic or maybe im jus a dreamer , but what i sure do know is that the love that Holds strong between a mom n daughter is awesome[ sons too, but i aint one ...LOL]

I did mean to have the PEACH CAKE i baked her, for Mothers day here but am having this AMAzingly Jam tart Instead!!!
As also these Chocolate Baskets ,to place a Few Treats,
and u'll find the DELICIOUS RECIPE HERE
Tried it with Compound Milk chocolate here ,mixing in a bit of coverture:-)
It may seem like the baskets may not come together ,but u'll be surprised jus how easily they really do.
The rice krispies do stay krisp ,for a couple of days,
though maybe u could place these in an airtight.
I sure think that mini baskets will work well too, i had a rectangle one too,dat was pretty cute, but only this one got saved for pic[ hide them :-)]
Now back to the tart, very exciting......
Its the best tart ever and has the easiest recipe too....the crust aint roll out, u jus need to press it into the well buttered ,TART TINS...and ur ready to go;-))
The base is buttery and cool and the buttery flavour intensifies the next day:-)
I had a couple of heart shaped Mini tarts and a large one with hearts on top too:-)))
And with the cookie cutters.,i had STARS and FLOWERS on the MINI HEART TARTS AND HEART ON THE 7" ROUND TART!
And this FLuted TART with the REmovable Bottom,makes it so so easy to support the baked crust while you slip off the pan's outer ring.
loose Pan bottom also aids in transferring the tart to a plate or cake stanD.

EASY BUTTERY DELICIOUS JAM TART
adapted from the Gorgeous Smitten Kitchens, yup Deb Rocks!
1 1/2 cups (210 grams) all-purpose flour
1/2 cup (70 grams) stone-ground cornmeal or polenta [used corn flour and some cooconut powder here,alongwith ground hazel nuts:-)]
2 teaspoons baking powder
1/2 teaspoon salt
9 tablespoons (4 1/2 ounces or 130 grams) unsalted butter, at room temperature
1/2 cup (100 grams) granulated sugar [used icing sugar]
1 large egg, whole
1 large egg, separated [ used only 1 small egg n some white]
1/8 teaspoon almond extract [ vanilla beans worked for me here]
1 1/3 to 1 3/4 cups (450 grams) jam [ didn measure out my Jam, jus used an assortment of all sorts and homemade Strawberry and mango too]
2 tablespoons (30 grams) coarse-crystal or granulated sugar [lods of this]
1.In a small bowl, whisk together the flour, cornmeal,[or mix of cornflour,extra coconut powder and ground hazelnuts] baking powder and salt.
2.In a stand mixer with the paddle attachment or in a food processor, mix the butter and 1/2 cup (100 grams) sugar together until smooth.
[thats for those of u who have a stand mixer-for me it was whisking by hand in a mixing bowl]
3.Add the egg, egg yolk (keep the egg white from the second egg on hand for later) and almond extract [vanilla bean seeds] and beat until combined.
[now for the egg i always add less ]
4.Gradually add the flour mixture and mix until the dough just comes together.
5.Transfer about one-third of the dough to a lightly floured counter and shape it into a log about 2 inches (5 cm) in diameter or roll out between cling wrap to desired thickeness.[used heat shaped cookie cutters to cut out shapes for the tops here and had a few flowers too]
6.Wrap it in plastic wrap and refrigerate it until needed.
7.now butter ur tart Pan real good, as Deb suggests,coz her tart did stick a bit:-)I did and was happy i did!
8.Transfer the remaining dough to a buttered 9-inch (23-cm) tart pan with a removable bottom of a 9-inch (23-cm) springform pan.
Using your hands, press the dough evenly into the bottom.
9.If using a tart pan, press the dough up the sides to the rim of the pan and set the tart pan on a baking sheet.
If using a springform pan, press the dough about 3/4-inch (2-cm) up the sides of the pan.
Now i used the TART PAN[7"] , which am giving one brand new one away in this giveaway + had a few heart shaped cuppy tarts so needed 1.5 recipe of the crust.
10.Refrigerate the dough-lined pan/PANS until firm, at least one hour.Freezer is the best place ,if u want the quick way here:-)
11.Preheat the oven to 375°F (190°C).
12.Spread the jam or marmalade evenly over the dough in the pan.
i had fun here, coz i had different jams , including HOME MADE STRAWBERRY PRESERVE and MANGO JELLY, and these cutey JAm tubes ,that are a product i have fallen in love with, cute, so jus played along.
13.Cut the chilled dough into very thin discs with a sharp paring knife or roll out and cut out shapes with cookie cutters, get creative and u'll have a pretty design.
Arrange them slightly overlapped in concentric circles over the jam to form a top crust.
14.Whisk the remaining egg white with a teaspoon of water until frothy; brush evenly over the tart lid and then sprinkle with 2 tablespoons (30 grams) coarse sugar.
[ well i did sprinkle lods of sugar-way more than jus 30 grams for all i think]
Bake until the top crust is golden brown, about 25 minutes.[ my oven took me more than an hour]
Let cool completely.well i baked the little babies so i could Indulge rite outa the oven ,but they taste super buttery and fantastic the next day, and i bake at night.
HAZEL NUTS OILS N EXTRACTS......
Chaya had lods of deliciousness posted on her blog and her recipe with Hazelnut oil intrigued me so muc,a hard find here,that set me in the mode of the kind that says''nothing that we cant make @home'',and Googles our best pal here:-)I did find Hazelnut Oil around but was excited me was Hazel nut Extract:-))
I should probably post it with my Vanilla extract but it kinda had me excited and will post and tell u about my walk with it,till then here are some Awesome Hazlenut Extracts here and HERE and too!!!

ReplyDelete1.Okay, my favorite memory of Mom comes soon after worst memory for both me and my mom..
U see, I was a rebellious teen and once when mom yelled at me for something, i took my granpa's walking stick and hit my ma on the mouth and broke her teeth.Well that was the worst moment.
Great moment was when mom saw how upset and shocked I was and came to console me..thinking of it still brings tears to my eyes cause that defines who my Mom is..very selfless and loving.

ReplyDeleteOne of my favorite Mom's Day memories is when my youngest who is now twenty-two made my a Chocolate cake. All my family know how much I love chocolate. Well, he was 8 years old at the time and we had made many cakes together so he thought he could do it by himself. He didn't grease and flour the bottom of the cake pans enough, so guess what happened. He made me what he called a crumb cake. Since then he has learned and makes a GREAT!!! cake and I'm so proud of HIM.
