BUTTERY JAFFA DRIZZLE CAKE @ SECRET RECIPE CLUB

A cake that's so buttery and pound like with lods of vanilla topped with orangey goodness and if that aint enough there is a nice orange vanilla buttery drizzle atop the little loafs before u top them with melted chocolate.

Some home made orange candied peel and sprinkles and u have a cute little Jaffa cake at hand to snack on or wolf down :-)

Besides all u need to do is dump all the ingredients @ stand mixer and whisk away till nice , smooth ,light and fluffy ( did a bit differently but for convenience more than anything else).

Kimberly's blog made me feel even more romantic than i already am , i dont know if it was about her wedding or the mexican wedding cookies , but make me feel the love some more she sure did and once again i was so happy with my pairing @ Secret Recipe Club.

Kimberly aint just into but crafts too and i love she day dreams about moving to a beach , specially since i live in a land of beaches , with a beach less than 5mins away from home.

Walks in the evening never got better.

Though i so wanted to bake the wedding cookies , i promised someone to bake this cake for them today and i sure did.

A CUTE COOKIE INSIDE A CUT'R COOKIE @ SECRET RECIPE CLUB

Yeah , this is the very same recipe that's backed the world over and has been baked in and out since 1856 , the Toll house CCC recipe.

This cookie that has little children want to drink milk or hot chocolate or what have u....
And the cookie that makes us say
"" chocolate ,chocolate , chocolate , oh how i love thee in a cookie....""

But with a little difference , these cookies are stuffed with some other cookies and chocolate too.

Having read reviews and raves and loves and different combis of this recipe , it's the secret recipe club and Foodies@work that finally got me down to baking this very best CCC for the very first time.

The SRC was started and is organized by Amanda and every member is assigned a blog to discover , explore cook/bake and enjoy.
Now we all would realize the fun and fiesta in this and i wouldnt need to get into the details , instead if u arent already a member , hop by and sign in and sooonn.

Foodies @ work is a blog by 2 foodies from 2 different cities but with one big appetite.
The reviews are fresh and very interesting , if i have to travel to Boston , NYC or beyond , this is one blog i would want to read about some more.

MY DUKAN DIET + RECIPES- VANILLA COFFEE PUDDING

If the word diet puts u off , well it does to me too (ignore the word in the tittle though), and for me its more of a lifestyle , eating a bit of everything.

But for someone who needs to shake off some pounds build up on eating (read binge'n)way too muc than normal amounts in the name of being a foodie , this is te way to go.

Now i have been working out for around 3 months and lost weight (i loose faster than i put on bdw), totally into weight training to build that all that muscle which will continue too burn all my calories even while i sleep and absolutely enjoy it coz i love high energy and always have lods of it left even after a 2 hour workout ..
(sounds like music to the ears doesn't that ?? )

BUTTERY CINNAMONY VANILLA HUNGARIAN COFFEE CAKE/MONKEY BREAD @ CAKE SLICE

DO NOT read this post and recipe unless you plan to bake right away

Gives you craving to have something cinnamony with a hint of vanilla and maybe chocolate . -ok add butter scotch to that . .

Yup thats what I microwaved , all of the above in chips with a few caramels and curly wurly all sprinkled with cinnamon sugar atop. . Now I was at peace to go back to the recipe and post . . .
Ps- if you want to try the dukan diet make sure your pantry doesn't boast of a good collection of chocolate chips of all kinds.

There is no saying how creative You can get with them.

Important note/WARNING

Rightly said that this cake will surely test your self control ,i needed a few caramel bars dipped in cinnamon sugar even as I begun baking these ;-)

And if like me your making this coffee cake or monkey bread cake for the very first time as I was you'd be just as excited.

All the steps ,tossing the vanilla sugar with cinnamon in a zipper bag (or a large bowl as i did) , and tossing scoopfulls of the prepared dough to coat them all with the cinnamon vanilla sugar, placing them in the prepared pans and sprinkling with ~~nuts~~ and ~~raisins~~ pecans as I go . . .

And all those scents wafting around while baking.

And while that bakes so waiting to have a peek a boo of how these bake , what they would look like after they bake and how deliciously the cinnamon vanilla combi would take these to a new height.

I went back and forth a many times over trying to decide on a large cake or a couple of minis, and a couple of minis in my small pan it was.

Oh all that caramelly goodness coating the crunchy pecans.....

The dough comes together pretty easily , mix the dry ingredients , cut in some very very chilled cubed butter , and let some nice vanilla buttermilk or whisked yogurt bring it all together.

Then scoop balls with whatever size of scoop u want , and toss them in some Vanilla Cinnamon Sugar (ahh already getttn so good) , get them a bit round again if they seem to have gone outa shape and this step is soo good , all that cinnamon vanilla sugar clinging to ur warmish hands as it goes.....

GRILLED HERB SHRIMP with "ONION SALSA" @ INA'S GARDEN

Grilled Herb shrimps , with Basil , lotsa garlic and some pine nuts to be a bit more precise.

This is the ''Wild Card '' fortnight at Ina's Garden and that means you can join in the party with jus about any of ur Ina's creations ...

Shrimp and grilled together sound exciting and this is just the shrimp am going to grill over the weekend for a dinner , but for now i jus grilled a small batch for 2 of us for lunch and it was awesome.

The best part about this recipe ( i promise ur gonna love this part) is that u can marinate the shrimps (or even chicken) , spread it on ur baking tray , cover well or cling wrap the previous nite and all u need to do on the day of the party is pop the tray in the oven a little before the guests arrive to a warm very very yummy smelling home ...( c i told ya , ur gonna love this )

There were actually no limes in the pantry , and i subbed in some home vinegar and the flavours it helped bring were fantastic, pairing beautifully with the french mustard.

+ all the marinade with the onion served as a great salsa kinda of accompaniment with the prawns.

The onions get mustardy and the vinegar, again , lends a nice flavour to them.

So yeah one whole onion for a few shrimps is totally worth it coz the grilled onions grab the nice shrimpy flavour plus with the basil et all , its gets absolutely delightful , and if u make lots of it u can even have some of it on some toastess and viola u have another entree.

The pine nuts were added on impulse coz of their ''pesto'' pairing with basil .

And just like Ina's recipes , this one is soo forgiving too , specially if u dont seem to have it all in sur pantry.

I measured nothing out , jus played it by ear and still it was sooo good!

+ i added some whole coloured peppercorns with some crushed one's , and lots of chopped garlic with a whole onion , that as i said , is a nice accompaniment with the shrimps.

GRILLED HERB SHRIMPS

original recipe here

7- 8 larger shrimps, heads and tails left on

1-2 tbh chopped garlic

1 red onion chopped

a good handful of basil chopped

1 tsp pf dijon mustard

1 tsp whole peppers (coloured)

1/2 whole peppers crushed

some pine nuts (optional)

a splash of vinegar or wine or lemon juice

salt to taste

a ''good'' drizzle of olive oil

1) Mix all the ingredients in a bowl , and marinate the shrimps , atleast for an hour .

2) Place on a baking sheet , if grilling under a broiler ( with all the marinade), and grill till done , turning once in between.

3) Dot with butter when done (optional ) , and serve with all the marinade ,now browned and yummy of onions and pine nuts.

Serve with the ''onion salsa '' u grilled along (marinade)

NOTE- if u want more of the onion + basil+ pine nut salsa , jus add some more to the shrimps thats all, and dot with butter /olive oil.

I think this would be fantastic with some Pesto or parmesan and bread crumbs too , but whatever u do , dont leave out the garlic (and butter too :-) )

MAIDA'S BIG APPLE PIE WITH CRUMBLE @ MODERN BAKERS

Here's my first post to the Modern Bakers group and From Modern Baker By Nick Malgieri an Apple pie , not just an Apple pie , but Maida's Big Apple Pie with ~~Crumble topping~~ ....

Ok ok , i had this crumble ready just for this pie in the freezer , and well while baking i took multi tasking a bit too far , and it remained sitting right there , so that for another pie ..

I have baked a pie from Nicks recipe , so this is officially my second pie, that one being an English pie with blackberries, mango and guava.

Whether u wanna slice it thru , or have it whole , love it u sure will....

The rich pie dough is one of the best dough's ever and since there is no sugar in the crust u can work beautifully around the fillings.

Plus sprinkling some home made Vanilla or cinnamon sugar before u pop these in the oven , atop the crust is always fun ....

Since i love hearts being there a plenty in my world , this was so expected of me , wasnt it ?

The filling is absolutely delicious , though i did cut down on the sugar and up the butter a bit.

The brown & vanilla sugar ,along with an extra vanilla bean , 2 types of cinnamon (pics below), and butter make it absolutely delicious.

Moving right back to this pie , an apple pie , i did try some stuff around the recipe , and though not perfectly pretty , it made me happy , deliciously happy.

SWEET & SPICY ROASTED NUTS with ROSEMARY @ INA's GARDEN

Cashewnuts are as Goan to me as Cashew feni to a tourist traveling to my land of sun , sand , sea and sea food , Goa , for the first time or second or third (if u have not heard this , i have many many times over, that they HAVE to feast on the cashew feni when in Goa on a holiday or not )

Too good , too fast to be true...

See how well the sweet and salty spiced butter coats the nuts..

Never leave Goa without some of these.......

Even if i cant generalize that , well i want to for the love of Cashewnuts anyway , besides being a wonderful nut , it connects me to my goan connection , in a good way .

Always looking forward to grind , slice , chop cashewnuts in baking or cooking , here was another opportunity and so for this weeks Appetizers and snacks , Rosemary roasted cashewnuts from Ina's Barefoot in Paris .

I dont know what part of this recipe is French but i like the sound of it ....

U simply cant stop at some....

VANILLA COCONUT LAVENDER CREME BRULEE with VANILLA FLUER DE SAL

I know , a long name as ever but thats what it is (lots of) VANILLA COCONUT LAVENDER CREME BRULEE with a sprinkle of VANILLA SEA SALT on some and dotted with SALTED BUTTER on some.....

Like that Creme Brulee is a French word for what the English refer to as burnt cream..

Simple ingredients Milk , cream , eggs ,sugar and Vanilla come together to make this delicious dessert.

Never too much Vanilla.....

For this months recipe choice for Baking with Dorie GrapeFruit picked the Creme BRulee and aint we all glad she did.

We bake together once a month and would love u to join along too , come here and lets bake all the wonderful goodies together , so much fun....

BAKED GARLIC SHRIMPS @ SECRET RECIPE CLUB

This was one long crazy month and i say it in such a good way , but this was really really not planned ok , absolutely NOt.....

Though der is a niggly little heart break dat refuses to budge i still had a very beautiful month , even away from the internet and life is jus getting so beautiful that i still wanna throw up both my hands high in the air and say hooray...im in love.......

And i so missed being around and saying hullo to u all and though its gng to take me a bit to catch i sure sure will...and absoultely...

I have been cooking and baking lots and lots of good food , mostly local goodies,coz we have been entertaining a bit and though we sure can get somebody to cater there is nothing like home cooked goodness topped with love.

Lets get talking about food right away and to begin with is my very very late posting for the secret recipe club...

Secret recipe club begun by Amanda of Amanda's cooking is a fun group to be a part of and u can join in here , and believe me , its totally fun not only coz till the last day u dont k now who is assigned ur blog but u do get to discover some very wonderful blogs and some very wonderful foods.

I have know Lizzy for awhile now and before i go gaga about her wonderful blog i must say she has one of the most wonderful hearts , she is so kind and sweet and her words and thoughts to me always scream so.

I love the love about her and to top that she has an absolutely delicious drool worthy blog....oh its soo yummy!!

I have bookmarked so muc from her blog and was more than jus thrilled to be assinged with her blog.

This and this and this and this ....oh there is more too and i sure have to try the stuff soooonnn.Its also an added bonus that her recipes are so so quick and easy and so good to have at hand on a busy weekday night or relaxed weekend ...

And more so if u have guests , unannounced, whatever ur situation or ur tastebuds demand , she has a recipe for u.....

Now having jus come online , was a little lost catching up and though had planned on min of 3 recipes from her blog i simply couldn do it and went with this favourite.

I had everything , except bread crumbs in the pantry and am sure u do too , this recipe comes together at the snap of the finger , and not to forget is soooo absolutely delish too.

I didn add muc butter as the original recipe and used one red serrano peppers , for a little bite .

Also stuck to whole black peppers , which i love to bite into.

Where crushed pepper goes Habareno pepper and Chipotle pepper flakes worked well for me , infact very well.

All u need to do , is toss all the ingredients together or simply line the shrimps in a single layer on a baking tray and sprinkle it all over and bake..

If u have some garlic bread u can add it to the oven , in the final minutes of baking so u have some warm bread to dip the juices in.

Lizzy does delicious with some warm french bread... me love...

BAKED GARLIC SHRIMPS

recipe from Lizzy's blog

Easily double and please triple actually :-)

12 shrimps ( peeled and deveined with heads and tails intact)

a good drizzle of olive oil

2 tablespoons red pepper chopped

2 tbh parsely/cilantro minced

4-7 cloves garlic minced

1 serranno pepper,deseeded sliced long(optional)

red pepper flakes to taste

black pepper to taste

garlic powder (optional)

butterdepending how buttery u want it

parmesan cheese to sprinkle.

salt to taste

Arrange the shrimps in a single layer in a baking dish and sprinkle all other ingredients except butter and cheese atop.

Dot with butter , sprinkle with cheese and bake in a preheated oven till done .

Is this the longest time i have been away ...though i would totally love to say Yeah yeah yeah , it aint so coz omce i was without a computer and the company too the longest time to deliver the new laptop , and well i was away.

LAVENDER VANILLA APRICOT BARS with A PECAN CRUMBLE @BAKED

Its Fathers Day today and somebody asked me the question , what is the best thing ur Dad taught u , without battling an eyelid or thinking , i replied "" Love , to love . And he taught me that by loving me immensely , unconditionally , always .....till i was brimming ...and im till date..."".

Love sure makes the world go round and fills me with a positive energy like nothing else can , its lends a bounce to my step and makes me give my best ...always...

When i think of him today , my heart swells and my eyes fill ...i love when someone see's a lot of him in me .....

I havent seen him in a long time , a very v longgg time and it feels like a longer time.....but i have the hope of seeing him someday soon, in heaven, when we meet again.

I wonder how he would be today , i would have so loved to bake and cook and go for long drives with him today , with me behind the wheel...

Miss u dad, lods n love ya forever...with all my being...

Not jus today , but 365 days , coz dats the real meaning of love the thought behind these special days.

Moving on to these bars , these have nothing to do with dad , infact i never baked these for him , i dont know if u would have loved them ,for besides the fact that i baked them.

I wish i had .....

Never miss to spread the love by wishing ur pals and family who are dads , a fantastic Fathers day * 365...

They are the most special people for the children for whom they make rocking dads!!

I want to go thru building these bars step by step ,not to make it seem lengthy or difficult which they are surely not but coz each layer is pure joy to make as much as fast and easy to put together.

I used Lavender instead of Rosemary coz its not everyday that we find rosemary here and i LOVE lavender with VANILLA...
Add a little zest and u have all my fav flavours in one bar....

INDONESIAN HONEY GINGER CHICKEN AT INA'S GARDEN

I had to add the honey to the tittle of this very flavour full chicken coz it sure plays a wonderfully sweet role in this chicken.
I mean jus 5 ingredients ,including the chicken , and all u need to do is marinate the chicken overnight , and pop it in the oven the next morn for a delicious treat.

This is the chicken i wanted to bake for this weeks theme at Ina's Garden and it is April ,of 21st Century Housewife who chose a them which revolves around Chicken , ie Comforting and delicious chicken recipes so if u have ever made any of Ina's recipes , be sure to link them below so we can all check them out as well.

And our next posting at Ina's Garden is on July 7th which is Ina's Zucchini Gratin and u will find the recipe here.

The recipe sure calls for quartered pieces of a whole chicken but i missed that part and had already kept these pieces ready so i went right ahead with the recipe.
The ground ginger and garlic along with the soy work its magic overnight and the honey ....well the honey sure does too....

I think all the glaze is coz of the honey , and the sauce is rich and dark brown.
I used my fav sweet soy sauce but u can use any one u like and a sprinkle of pepper would be great too though we all loved it the way it was.

Ahh, shrimps ...when i say i love sea food , i always mean shrimps (unless its oysters and clams am referring to) , so i went right ahead and marinated some shrimps too.

And am sooo glad i did , the marinade mixing with the juicy juices of the shrimps gives u a good lunch with some lettuce and green onion ...
Actually lodsa mixed lettuce and greens of spring onions is more like it..

And then get really soft and tender and absolutely succulent with all the marinating and baking....

Drizzling jus a bit of sesame oil atop a few of these gives them a nice twist too...

ORANGE ALMOND CRUNCH CARAMEL CAKE @ CAKE SLICE

Two months into our new move and its been so beautiful , oh yeah there were hiccups and a sad incident but now its beautiful , very....

Moving has u looking forward to a new life and this has been one , in every way and so abundantly good too.
If there is so much of good news coming thru in ur personal life and family as well , u have nothing but to be excited and jump with glee...
Its got busier but with a schedule i'm in love with, beautiful early morns , a little nap that works wonders on the skin sometimes at noon and more...

And then u bake along , specially a cake like this , it gets yummy luscious...

BUTTERY CRUNCHY LEMON VANILLA CORNMEAL SHORTBREAD COOKIES @ BWD

Buttery and Crunchy together , specially in a shortbread spells pure Joy and happy smiles for me.

Specially more so if they happen to be in Shortbread.

Fair Warning , before ya says , oh no , lemme say , oh yes , there are hearts happening here yet again & i have my baking paraphernalia to blame for that and happily so...

My fondness for shortbread shines with these and was enlivened when Rivki chose these for Baking along for our group Baking with Dorie with these....

Rubbing Zest into sugar , specially Vanilla sugar makes things even more fragrant and the addition of jus a hint of Almond extract , notches flavours to a delightful and heady love ...love for shortbread and all things shortbread.......

U MUST scoop out some butter as it beats with the sugar and the flavours , with the tip of ur little (or middle for dat matter , doesnt matter as long as u do it) , and indulge in how yummy it is and how good a Shortbread this one is going to be.

And i must , must ,must talk about the crunch , the amazing crunch , that comes from the cornmeal , that also adds texture to the bite which is soo good and welcome.

RICOTTA POLENTA FIG CAKE with WINE HONEY FIG COMPOTE

Polenta has been on my mind, actually a longing on my heart ever since this Cherry cake.

If u have never baked with Polenta , u will love to discover the crunch and jus the right bite it adds to cakes and bakes.

I dont know if its about the recipes or the Polenta , but whatever have baked with polenta to date has been moist and has had a bite full which i love.

Going straight to this cake , lemme tell u , its one of the very wonderful cakes i have baked and is just what u need with a pot of ur fav brewed coffee.

This is a dessert on its own , and i love it originates from a French magazine.

The addition of Ricotta , makes it even more special and endearing and the honey makes for a wonderful cake that ages beautifully.

Halving the recipe gave me 5 little tart cakes (yeah i cant keep away from all things heart too long ).

The differently textured compote is the perfect accompaniment to this cake, with or without a scoop of vanilla cream or icecream.

HOW TO MAKE RICOTTA CHEESE

"Oh i make cheese at home u know" ...sounds like music to my taste buds and have been reading Deeba's wonderful posts , i so wanted to try cheese making ever since and at last was pushed into it coz the Ricotta i had sitting in the refrigeration smelled weird enough to make me want to throw it out.
Deeba , thannxx for making me fall in love yet again , with Cheesy delites in a different light!
(i really didnt mean for dat to rhyme )
Cheesy love and some more...

There is no fancy equipment and ingredients u need here and that will make u a happier person as it did make and the end result is still deliciously inviting.

Plus all that u need would be in ur pantry right now and this is something really i would go back to again and again and i am sure so would u.

I mean , how can i not want some fresh ricotta to have to slather or pinch on to sandwiches or salads and enjoy the cream , ever so slightly tangy , fresh flavor.

Do u need any more reasons to get some whole milk , lite cream and yogurt out this evening , this will change the way u look at cheese and u will find urself making this several time over i did.

+ u have the option of making delightful spreads with this , how about roasted garlic and pink pepper , with some lettuce and bits of leftover roast , u will have one hearty sandwich at lunch time.

Or maybe u'd really be tickled pink with some olives and salsa added in , some more fresh basil , egg /any meats and u will soon have another big fat sandwich to make u gay.

Or pesto...so good!

I think of lods of combis galore for spreads with this Home made Ricotta cheese ( and an amazingly awesome dessert one coming soon), but i can assure u even a snip of some herbs fresh from ur window sill and smoked salt will make this more than worth the time (which is barely)

IN INA'S GARDEN with ALMOND BUTTER JELLY BARS

I find myself reaching out for my cake tin all time whole day long , coz there are these really deliciously addictive bars in there today.

As i said in my previous post i along with my co-hosts are baking PB jelly bars this time round and i did so with almond butter for 2 reasons , i had no skippy around and secondly need to use up all that ground almond which i have.

They are buttery , which always has me grinning, + there is lods of jelly in there , actually a nice jelly layer in between.

\And not jus one type of Jelly/jam but there is some lovely Vanilla Apricot preserve and Goiabada too .

And thats not all , instead of peanuts , one half of the bars are sprinkled with pecans and the other half with macadamia's that with all the baking get well roasted.

Whether i find a silce of one with Macadamia ....

IN INA'S GARDEN w PB JELLY BARS

Its the 5th of May , Cinco de May and a long time since my last post. There is so muc happening ,but more on that later , for now i wanna talk about Ina's Garden and one of the best PB Jelly Bars ever.

BAREFOOT CONTENSSA'S POUND CAKE's- COME JOIN US IN INA'S GARDEN

Bursting with citrusy notes and with a hint of wonderful Vanilla , this pound cake is fragrant and soft and the best pound cake i ever had......

And it couldn get any easier and quicker , how easy is that.....

Goodness of butter in every bite ,specs of Vanilla peeping thru and moist and soft...

This cake may keep well , but i really dont know , coz this one was gone faster than i knew...
Ad u will see this cake gets smaller , as i shoot it , yeah , thats how good it is , and shoot the pics , when no body is around :-) or maybe u too....

I would have loved to have u see all the pics of the cake , along with step by step pics , but will save that for another time.
I baked this one thrice over , with different variations as given below , and the results were amazing each time...

A CHOCOLATE CHOCOLATE CAKE

Its noon and as i look outside i see the blazing sun , shining and hot , its cool in , actually cold enough to have a coffee and cookies , which i am after many a days.

Firstly i apologize for not replying to all ur sprinkle fairies on my previous post and i will now and catch up with ur blogs too.
The move is not complete and when its in bits and parts due to some pending work or otherwise , it does bring a lot of change in ur schedules.
Wasnt really complaining but truly enjoying it totally , till something very sad happened mid way and brought life to a stand still , and i m still getting over the nightmare.
There is a lot on my mind and heart right now , sad stuff , and i dont really reach out when am sad.

Till i begin baking again ( well the oven aint connected yet), had to share with u these cute Chocolate cakes that i baked from the very cute book Chocolate Chocolate , complete with a pink cover.

Baked these ions ago , but still think they are cute , and had these pics staring at me for a long time.
There are different flowers to go and a nice chocolate glaze too.

I dont have the book with me right now , but would love to share the recipe with anyone who wants to bake these.

They have melted chocolate in them, and i did these with milk chocolate , but am sure dark chocolate would be even better.

Which one do u like the best?

I love dolls , as muc i do teddies , so here is one...

I love the glaze , its so good and slices pretty too.
And smeared with some Nutella , they get even better.

Nice yummy cake....love the little adorable specs o Vanilla , dont u?

Oh a little bite.....

WHERE DID IT GO WRONG ????- MARCH CHALLENGE

It got preponed and postponed and preponed and postponed again and yet again postpoed today. There was the polishing and that little rod and the chimney and exhaust fan that clashed ....oh dear...

Yeah we the family of Bright Morning Star are moving , to a new home , a new world , and whole new excitement.

It ain't exactly what we were looking for , but am happy , very happy , specially with my ''pink room'', yeah its pink and there are ruffles in satin and pink to keep me happy, plus princess sheets and comforters ...yeah in pink and that little ''princess pink night lite ''everything is cute and i love it.....

And to match i have 2 pink streaks in my hair , yeah that my real hair in pink :-)

The oven seems wonderful too and i cant wait to bake there.

Loved open kitchens and this one has one , and airconed for those warm hot days.....

But there is activity happening in my present kitchen ,lods of it , in between , checking on workers and stuff and packing n running around looking for that perfect lobby table and chest of drawers....

There are goan curries being simmered and rice being steamed , salads being chopped and lods of fruits juices being downed ....the summer is moving towards its peak and its getting warmer ....

Well ,where baking goes , i personally packed up most of my stuff , coz i dont want the packers and movers to handle that :-)

The only baking am doing is cakes , lovely cakes of different kinds ( the best ever ) ,and i do plan to post about them and all the variations i am trying.

Since things dont go as planned , we aren't yet there this weekend , wish we were , cant wait to get all my goodies set in the kitchen.

The first morning there with slices if my fav cake and Vanilla sugar and coffee.....the day spend in getting things in place and cleaning up.

While am at this , i so need help , i baked my first pound cake a bit back and this was the little disaster i had, am sure one of u guys will tell us where and what really happened ....

The excitement to post my Cake slice post does'n seem to be too low , considering i had a mishap , and the first time something like this even happened to me.

Coz i know i am baking along with a very wonderful group , u all , and i know ur inputs will be of great help to me and bring peace to my thoughts of what went wrong where.

I have step by step pics , which was to post for my official post on the blog , and i might jus want to try this again , after reading what u all have to say.

The only change i really made was to halve the recipe , and bake in a small loaf pan and 3 little cupcakes.

I filled the pans 3/4 th and i have filled the pan more than this and never had a spill and defiantely not this kind of a spill, where everything keeps bubbling thru and spilling till the point of time i shut off the oven.

To begin with the hot cream with coco powder , i added hersheys dark coco powder , and a tbh of Valrhona dutch processed powder , so added more of the coco powder and needed a little more cream to get some paste.

And now to cream the butter , with the sugar .

Used Pure ocean salt , so added it with the butter , to ensure it dissolves ,

Added the vanilla with the butter too.

now the recipe says beat till fluffy , but mine was more kinda sandy :-(

And nows the time to beat in the coco powder , and beat again.

And next the eggs , one at time , since half of 3 eggs is 1.5 eggs , i used one L egg (around 53 grams) ,and one small egg (33 grams) , and beat in.

After mixing in the eggs , on low speed , till smooth , fold in the flour sifted with baking soda.

And pour in a greased baking tin.

In the cupcake i dropped some apricots jam pieces rolled in flour to get some nice apricot pockets , well nothing of that sort really happened.

What happened next never happened to me before and i have gone over the recipe and conversions , maybe i missed something , but all that happened is the mixture bubbled throughout and only spilled , and this is what i got .

The mixture left in the tin though quite good, was sticky , sweet and gooey and nothing close to cake.

It was a tad bit and more chewy too.

Here see....

And the muffins spilled over too and had a crust and dip but again were nothing like cake nor brownie.

And this is what happened to the crust ....

Broke them into cookies , Like chocolate breaks ups (idea borrowed from butter break ups which will post on my blog in a bit)

I have made mistakes in recipes , in even leaving out eggs or adding more but nothing like this happened , ever.

Now i see the i did add more of coco powder and cream , but would that be a prob really?

Did anyone have any issues at all ?

Makes one 9x5 inch loaf cake

March’s Cake: Chocolate Cream Pound Cake

(Recipe from Cake Keeper Cakes by Lauren Chattman)

MY HALVED INGREDIENTS TO THE RIGHT

Ingredients

3 TBH HERSHEY'S+1TBH VALRHONA - 6tbsp Dutch cocoapowder

3TBH HEAVY CREAM - ¼ cup heavy cream

1/2 CUP + 1 TBH - 1 cup plus 2 tbsp all purpose flour

1/8 tsp - ¼ tsp baking soda

1/8tsp pure ocean salt - ¼ tsp salt

1/4 th cup(1/2 stick ) - ½ cup(1stick)unsalted butter,softened

3/4 thcup -1½ cups sugar

1.5 eggs - 3 eggs

1 tsp vanilla extract

Method

Heat the oven to 325F. Grease a 9x5 inch loaf pan and dust with flour.

Sift the cocoa powder into a heatproof bowl. Place the cream in a microwavable bowl and heat for 30-60 seconds until just boiling. Pour the hot cream over the cocoa and stir and mash with a spoon to make a thick paste. Set aside to cool.

Combine the flour, baking soda and salt in a medium mixing bowl.

Combine the butter and sugar in a large bowl and cream with an electric mixer on medium-high speed until fluffy, about 3 minutes. Scrape down the sides of the bow once or twice as necessary. Beat in the cocoa powder paste until smooth.

With the mixer on medium-low speed add the eggs, one at a time, scraping down the bowl after each addition. Stir in the vanilla.

Turn the mixer to low speed and add the flour mixture, ½ cup at a time, scraping down the sides after each addition. Add the last addition, mix for 30 seconds on medium speed.

Scrape the batter into the prepared pan and smooth the top with a rubber spatula. Bake the cake until it is firm to the touch and a toothpick inserted in the centre comes out clean, about 1 hour and 10 minutes. Let the cake cool in the pan for 5 minutes. Invert it onto a wire rack and then turn it right side up on the rack to cool completely. Slice and serve.

Store uneaten cake in a cake keeper or wrap and store at room temperature for up to 3 days.

SUNSHINE THURSDAY-RAYS THAT SPARK'D e BRIGHTENNED MY SMILE DIS WEEK....

Vanilla Sugar is pretty much featured more than just a couple of times here and is repeatedly used in almost every dessert recipe.
Yeah , ur right , Vanilla sugar sure has me week in my knees and has me donuts, i love the whiff of the sweet aroma that floods my senses when i open by big fat jar of Vanilla Sugar.

And here is a jar with a little hand written label , in a jiff.

Yeah , i know , this can be better and u can order v v pretty labels online , but these got done as i was jus rushing out the door and needed a jar to take along.......

And it pretty muc tells my pal , as i hand over the jar , of the wonderful sweet moments that are in store for them.....

Whether u are off for a dinner to friends , and a need a jar of sweet something to add to the basket or need to pep up a pal , this jar is sure to bring lods of smiles ur way....

VANILLA SALTED BUTTERY BREAK UPS - A COOKIE for FFwD

If u have Butter ,Vanilla ,and Sel Gris( a goan one) added to flour , what else can u expect but deliciousness galore and lods of it.

Thats exactly what the Salted Butter Breaks ups that we are baking this week with FFwD , is all about , plus lods of fun.

I totally wanted to try these cut out too and at the same time didn wanna loose out on the fun of a large cookies that i could break out and dip with my coffee.(my fav current being Columbian coffee, which am sipping right now as i write).

The egg wash makes it so much easier to sprinkle some more salt , though i went the sprinkle way + u can play around here , Lavender will be so so pretty , wouldn it ?

Or maybe some saffron threads of Green sicilian Pistachios ?

Or jus ur fav salted nut , chopped jus the way u like it best?

Another thing i love about these is that they are nice and crispy around the edges and as u get closer to the center they tender with jus a bit of chew in them.

The smaller cookies baked crisp ,all the way thru though.

And its a very easy cookie too , u mix up and bring together the dough in a jiff , press and roll out into the thickness u want , refrigerate, paint egg wash n bake .

A BROWNIE THAT WON HEARTS AND A PRIZE ...

AN OREO COOKIE d BAKED WAY @ MANY WAYS ~BAKED SUNDAY MORNS

If Oreo's are kind of cookie , these will be too.

They have that same ,almost same chocolaty flav ,and are filled with a filling close to the original.

For those in India , this one is a replica of the Pure magic cookie , which is also something i love.

To begin with i have a filled Shamrock cookie, jus in time for St.Patricks aint it.
I didn sprinkle these with the salt but i think Vanilla Fleur de sal is so good.

I know , my cookie cutter is like this and then i cut them out with mini hearts.

Baked sunday morns have thought me one thing for sure , that as fas as possible i shouldn miss out a recipe from Baked , coz they jus keep getting better + the fun of baking together is not to be missed.

And then there are flowers, pretty flowers in time for Easter and Summer, jus round the corner.

What really made me joyful about these cookies , is the filling , always wanted to whisk a filling at home that resembled my fav packaged cookies , coz the way i eat them (read jus below) , i am always running out of cream.
+ i love packing tiffins so am always giving tiffins to family even when home and all those ''creamless'' cookies find their way to the tiffins , with complains galore later.
Infact now , nobody takes an oreo from me , coz its always without the filling.
this fillin recipe has solved this problem for life.

The filling is with more shortening and some butter with some light rum ( used butter extract instead of rum ) and vanilla extract.

Fantastic.

Now whether an Oreo or Pure Magic, there is a way i eat these , i join all the filled sides together to make a sandwhich of 3 layers with 3 layers of the cream , yeah the cream is never enough and the rest i store in my pink , heart painted tin , to dip into Nutella and leftover fillings ,so there are no complains around home that urs truly eats all the cream and leaves the biscuits for the rest of the gang:-)

I Love Pioneer women and with me ,a big whole world choruses....''we love her too'' ....and here is my open letter to her..which she might jus not ever read , though i hope she does :-)

We sooo loveee her......Whether she's asking u ,u like this thing or that thing?

I want to bake all her cakes too...

I love all she has to say about love and the way her children love, i love the romantic sweet love full of suprises and more [ and i aint talking about keepin plastic green snakes in d laundry in d hope of scaring malbro man,never mind u get scared the wits outa u , n thrice over:-))) ], but i love the daily kinda love too!!

I love a good sprinkling of both and i am saying this outa practice mind u, Love in action ,PW says, i second n 3rd and 4th dat, Ree!!!

That doesnt mean i dont fancy Valentines day , i sure do....infact i love pink , red and hearts all year round (yeah these are baked in hearts too , and i wish i could lay my hands on the pink of the same ), but Valentine's for me is all year round , where hearts pop when i walk(in air) ...

The love when i see my mommy's beautiful face , first thing in the morning ....and she smiles....

The love, when she shuts the door , so quietly ,so that i can sleep some more.....

The love ,when am pouring over pots and pans , to fix lunch or dinner or brunch , with something or not ,my family requested...

The love, when we go for a lonnnngg drive , and there are giggles and laughter , and we stop to watch the sunset on the beach.....

The love ,when times are low, and we need 'us' more...

yeah Love is sooo in the air * 365...always.....

Her book, is peep into a life, her life, large size, u wont keep it down , till ur done, with the beautiful walk and the buttery ,and super yummy foods!!!

SAVORY CHEESY HERBY BREAD @ FFwD

Savory and herby.

Not jus herby , but filled with herbs , to the brim ,which is a good thing here.

There are poppy seeds to make it prettier (ok fine i wasn't adventurous enough to add vanilla and i cant do without my tiny black seeds fixation , not to forget i have a rather large jar of poppy seeds)

And there's some slight garlicky goodness too , jus so , to add some garlicky to the home garden garlic chives.

If that aint enough, its cheesy , very cheesy , really , there is all kinds of cheese happening here , and it was the perfect bake to add in all sorts of cheese's that seem to be collecting in my refrigerator.

Its nice to have cheesy and pockets said in the same sentence about this bread.

U can have it warm ,right out of the oven or 2 days later , if it lasts that long, lightly toasted , with butter.

Good with lunch as muc as with brunch as muc as that food basket u seem to carry everywhere u go,specially if u drive around with ur mom or sibling while they are at work.

Really , its the bessst savory loaf i ever had , moist and flavorful, full of cheesy and herby goodness.

I am baking right now ,(ok now at the time of publishing its already baked n we have happily enjoyed more than half), of course u will see it (asap) too, right here.
But till then i so muc wanna know what these herbs are?

I know ,i know , its been more than a couple of times , that i find something and have never seen and used or had it before ,i love to blame it more to the village i come from in Goa than my frog in the well status , but honestly i am so comfortable with u guys , my readers , my frens.
U'll have helped many a times with fruits and veggies i never knew.

The are flavorful and actually have a fragrance that makes me feel like im in a room full of basil , and i actually think like these are Baby Basil , maybe the bonsai kind?

Or maybe Basil crossed with thyme? I really have no idea , hope u do.

♥HEART BROWNIE BUTTONS @ BAKING W DORIE♥

After these intensely gooey Brownies made their Debut here , u'd wanna think its raining brownies..well id love to think of it that way , but here's a birthday celebration.
And i think i should call these Super cuteeee+ super quick, one bowl , zesty , chocolaty ,light and yummm, chocolate brownie babies.
Apparently , yes , i have not learnt the art of writing short and sweet yet, so please put up with my lonnng tittle's till then.

Super quick , coz all u do is melt the butter, chocolate and brown sugar in a pan , add vanilla and some zest rubbed vanilla sugar , when cooled stir in an egg, and fold in flour and bing, ur brownie batter is ready to bake and this is one delicious batter , but then i love to eat all sorts of batters , yeah me , the very me who really doesnt fancy raw eggs.

I actually thought i'll bake them in a pan and then cut them out with my little heart cookie cutter , but then decided otherwise.
The lemon zest in there, is jus so light , yet a good addition.

Baking With Dorie , started by the wonderful ,GrapeFruit , is celebrating ,one year of baking thru , Baking from My home to yours , and im glad to be part of this small group and today celebrate one year of (not)baking with them.

And no , i havent been for a year , but the few months i have been here , i have baked some wonderful goodies along with the gang.

We have something special for u , these little babies ,packed all up, hope u enjoy...

These are the cutest brownies ever , i mean they are called brownie Buttons and thought the pics might not show it , they are tiny , half of my little finger , almost.

And i can't seem to resist hearts , vanilla and pink , besides other things so u have an overdose here too, with a Fair warning , lods of pics - step by step and finished babies.

And they are a really good chocolaty snack to have , when those sweet pangs , strike after lunch , early evening , or night ...well for me they strike in the mornings and then i cant seem to get rid of the pangs thru out the day , i need something sweet and if its gooey and chocolaty ,all the better.

A pairing of cheese and Guava paste make a Romeo and Juliet cake , here a totally vanilla cake , that has cheese in it , and covered with a 7hour home simmered perada, also with vanilla , and a little sprinkling of Lavender here and there...

I dressed up the cake as my imagination of Juliet , full of love ,as the shape of the cakes, with flowers and crystals pins in her golden hue'd hair , in long layered gowns of wispy lace , in pink....

Here shot , as rustically (ok sort of...) as might have been in the pathways and cobblestone ways of Europe...

Romance and love....so in the air...by 365....

Have the cake is the second group {the first one doesnt run anymore so this almost like first now}, i joined after joining in blogosphere!

I have lods of reasons as to why i have caught up inbetween one of the main being, i was without a laptop for a few months co our order was delayed by the company!

Christmas time was delighting and we are thru the month of love , oh yeah lovee is in the air *365 and this is sooo wonderful!!

Its my turn to chose this months recipe and after going to and fro , around 4 , really wonderful but quick recipes this one finally made me feel like i arrived home....jus fitted in ....for the month of love*365...

Before this one,I thought and baked and thought and baked ....and then baked some more and thought and came up with lodsss of baked goodies options, oh so right for valentines!

Some things dat will breathe love into the air after its baked.....in a rustic way....as if ur down the local coffee shop ,by cobblestones in Europe, having the most romantic holiday fo ur life and enjoying every min of dng so.... its the month of love after all and what could be better than the ROmeo and Juliet Cake , jus like the perfect pairing in love , {ok minus the tragic end}, here 's a perfect pairing of cheese and Guava paste....

Happiness doesnt elude me a single day & the reasons keep piling on too.
These brownies have to be the toast of the season really!!!

Oh loveee is soo in the air * 365 + these were baked for someone special , someone warm and someone filled with genuine love ...

Was and am more than thrilled for baking these for the reason + this months Forever Nigella is seduced by chocolate.

Isn't Gooey chocolate , more so gooey chocolate brownies , jus that?

And Dark gooey chocolate in some gooey brownies....ahh sure seductive...

Am sure Ms.Lawson would have loved to baked these for someone as wonderful , packed them in a nice box and gone along too.

And yeah these have to be re-named as intensely chocolatey super delicious best ever fudgy brownies, and actually there are jus a few steps, melt the butter and chocolate , add the whisked sugar ,vanilla and eggs , fold in flour and nuts , and BAKE ....
I have step by step pics to make it seem easier but at the end thats all there is to it really.

Glitter and glittering hearts ...wouldn Nigella approve that jus a sprinkle of something dresses these up ?
Yes, next time i must have little candles popped into them , what i loveee is Nigella gives credit to the candle idea to her fren, a rare quality among the celebrity chefs to , goes on to say how endearing her heart is....

VANILLA CINNAMON HEARTY KISS "SQUARES"

The fragrance of Cinnamon with Vanilla is addictive , something u always want ur kitchens and homes to smell of.

I for one totally lovee having freshly grated cinnamon with my coffee everyday , a coffee aint exaclty to ''wake'' me up , its more for me to enjoy and love , and whenever i am baking i always brew some coffee, yeah and i have a new fav too:-) and something to keep the coffee warm ,but saving that for another post , ie the Loving this week posts which i so plan to post with a linky every wednesday/thursday!

Back to these bars , they are chosen by my very dear pal Chaya , for thi weeks Bake @ Baking with Dorie , a small group , started by Grapefruit ,we are baking our way thru Baking from my home to urs...twice a month and with barely any rules.

Makes for a relaxed baking and posting, which is always an incentive!

MADAGASCAR VANILLA BEAN RED VELVET LINZER HEARTS WHOOPIE PIES @BAKED SUNDAY MORNINGS

The whole place ,and more so the open kitchen , smells like cake right now.....ok Chocolate cake ....doesnt that sound good?

Wait wait....Red Velvet Chocolate cake....ahh better???

I think i can call these a cookie cake , and this is the first time i am ever enjoying one or eating one coz there are no whoopie pies that happen here.

Ok ok heart shaped linzer Red Velvet Whoppie pies, with Marshmallow fluff filling......now now , that is what completes the pic!

This should be there at every wedding , maybe on a lolly stick , but they should be there for sure.

Coz they are like a wedding , when 2 become one , here 2 whoopie pie singles , come together to make one deliciously cute whoopie pie.

This is my first post for Baked Sunday Mornings , where we are baking our way thru the new BAked +no rules, always a +, its also the first time ever im biting into a whoopie pie , so honestly i have no nostalgic memories of this one , but have been looking forward to a whoopie pie , so its a post of all firsts happening here.

They were lovely , the chocolaty flavor so good, with Vanilla making it better , i thought espresso would bring it out more , but than that would not be a red velvet than no?

The reason i chose the Marshmallo fluff filling , from the whoopie pie pan box, is coz ,as far as i know, thats what goes into whoopie pies , and i so wanted that.

I love Linzer cookies ,and Faith , a sweet and dear friend has these linzer cupcake up , ever since ,everything i bake , i want to make them Linzer.
Oh yes , there will be cupcake too:-)
And Linzer = piping some more fluffy filling in the cut out , detailed pics below...

SWeeT TaRT DoUGH in LITTLE BLUEBERRY ALMOND TARTS @FFwD

Tart dough is one of the most important {ok quite important} doughs to have stashed in the freezer and though i do loveee to bring it all together fresh every time , i wouldn mind at all to have some tart dough stashed away.

And since this week with FFwD , has the orange almond tart , actually one of the first 2 tarts i baked from AMFT , or for that matter , my v first recipes , and have been looking forward to post this.
Yeah , its been awhile since i baked this , but it feels like yesterday , oh i must bake this soon again.
I went the blueberry way , and i think lods of red and peachy fruits would make this pretty, as would hearty shapes.
Sure u can bake this without the crust too.....

I love the making of a tender ,very buttery dough which can be jus pressed into the pan.

The best parts if u freeze it ,pressed in the pan , u can directly bake it partially ,without any weights whatsoever.

Things I am loving this week , is something I am seeing all over blogosphere, but I dont yet where to link or who hosts this coz I have seen many a posts on different days.

I sure did think thursdays would be wonderful but I think wednesday , mid week is even better, but still thursday does have a nice ring to it doesnt it:-)

Things im loving this week doesn't mean I dont enjoy them otherwise, its just a way to highlight all I enjoy, and what happens behind the scenes that make that joy a tad bit brighter.

To begin with I am loving that love is so in the air by 365, and I wish so much the same for you.

I am loving brewing coffee every single day and sipping some late noon and after dinner.

And no:-) I am too much of a sleepy head for it to keep me awake.

And its actually the nip in the air, that helps keep the coffee love alive.

Loving all the baking and cooking galore. And all the super cute stuff mom and bro get me.

And for now , am totally not having enough of going thru , my new lot of books .....

In the pipeline for these thursday specials are places to shop online,cute stuff and more.

Also looking forward to share blogger tips and tricks and how I am learning to tweak my html codes and sites with excellent tutorials.
As in also Blogger tips and tricks (how to),Nifty tools and more,Where to buy et all.

COOKIE CRUMBLE,JAMMERS + R&J COOKIES in SABLES @COOKIE BAR@NYC with MS GREENSPAN

Ur are all snuggled up in ur pink bedroom ,dreaming away under ur pink cuppycake comforter , and u have been thinking cookies all evening and its only natural that as u drift off , ur going to be thinking cookies too.....

And jus as ur drifting off , ur mind starts putting together a dozen and more cookie ideas and u wanna get up , switch on ur laptop and get right away to put the post , bake the next day and complete the post...

This is exactly what happened to me ,the day i read all about Ms Greenspans Jammers and more at the cookie bar.

Adding more goodness to a wonderful Sable , the buttery ,tender ,melt in ur mouth cookie , only makes things better and add some fantastic home made preserves and topped with streusel/Crumble , is always a winner and more.

I mean how can this go wrong , A Vanilla bean Lemon zest Sable , reinforced with some Vanilla Crush And Fiori di sicilia...

And u need no sprinkles for these , but i could help taking my heart sprinkles out , but finally these babies landed on the cookies:-)

So here i have some wonderful Vanilla bean Sables , made better , with rubbing some zest in the sugar , and a wee bit of Fiori di Sicilia.
Infact ,along with the Vanilla bean , u can go with any of these flavors , or maybe jus all and they'll be absolutely wonderful.
Go with whatever flavor rocks ur boat , or a little of all maybe?
What ever rocks ur boat , rocks these cookies too.......

I lovee streusel and find myself many a times adding streusel to many a bake and a bit back when i saw lemon bars with streusel i was jus as excited as well.

I am also always adding a Vanilla bean or 2 every where , including my streusel and sables!

Oh i filled them with Caramel and chocolate last time and this time there is something fantastic too...Jammmmm...lods of good fruity jam = jammers.

Beginning with Sables , baking them in rings ( nice straight brown edges on the cookies come coz they are baked in the rings), i used shaped rings , like i do many a time , for cookies ,right from the wedding cookie to many more....so was more than happy when i read that Ms. Greenspan does this too!

Oh sure , had lods of cookie cutters to wash , some of them custom made , but that was a breeze with some hot water and good dishwashing liquid.

So lets begin with the cookie , for step by step pics , go here , this time i patted them all to cut out the shapes desired and bake them along with the same cutter.

Here is the dough , patted out , roughly into 2 squares , ready to be cut out, after an over night refrigeration.

And before u go any further brew ur self a coffee, Vanilla coffee is good...and if there are hearts and pink , then fantastic.....

And pour urself some, to begin with ie.....u can dip in more as u go...

BASQUE POTATO TORTILLA

I loveee Sundays , something special about Sundays brings on more sunshine n sparkle into my day, and here i was last sunday , whisking up a tortilla , a spanish name to a popular omelet served with salad , and on toothpicks ,for lunch or otherwise.

So this week with FFwD, i travelled to Basque, to relish this , the next time round ,im going to cut out different shapes as also have some fancy toothpicks for it.

The best parts , it came together beautifully , though i weighed and measured nothing but went along with what was available in the pantry , trying my best to stick to the original recipe:-)

This is my first time with tortilla and i loveeed it , we all did and infact i had to make 2 batches of these.
I so wanted to try this so instead of waiting to pick the stuff , i went right ahead with the greens and stuff in the pantry.

A COFFEE BREAK WITH MUFFINS & CHERRY NUTELLA SWIRLS

Light and airy , and so very easy .....Oh Muffins these are ...Coffee break Muffins in a little coffee cup +minis....

Out of the oven , warm , with a nice smear of Nutella and topped with a cranberry and Macadamia and a sprinkle of cinnamon , these were jus in time for the coffee break.

OR maybe a Cinnamon Sprinkled Kiss...

Ok ok , i know u want both , i take both too...

Or maybe i want them ALL...

I am loving the muffin chapter in Baking w Dorie and GrapeFruit , the founder of this wonderful group , did better , by choosing this wonderful muffin.

These were good , right outa the oven , warm and fresh , jus right for ur coffee...Oh coffee..

That they come together really fast is another plus point...

GOIABADA,PERADA,GUAVA CHEESE -THE GOA PORTUGUESA WAY

This recipe was born outa love ....for my mom , from whom i hear the fondest stories of her grand mommy making slices of perada , and filling jars and jars with them ,
when they were kids...

I imagine mom , with her curly locks and dimple smile ,
grabbing two little handfuls and more of these , and as she fondly and most cutely tells me how they took lods on the quiet , not coz she didn give it to them , but coz it was never enough...

I picture , all those hours of stirring , bend over wood fires ,
in a mud pot and wooden laddle....
...and the excitement of the children when those sacks of guavas from their farms made their way home,
well knowing what was going to be there in store for them in a few days from then.

Even as i write this , at 2.14 am , there is a large pot on the flame , with the guava pulp and sugar ,simmering away on low fire.

Yeah ,i have a few tricks up my sleeve , that i can afford to leave it un attended for awhile.

+ this time , im gng to split the time , like i'll have it simmering till i go to sleep , and then continue simmering tomorrow , which actually gives a better consistency.

If u visit Goa too , Perada is a sweet every goan store stocks on and sells well ,not the spread variety but the bar variety..

PERFECTLY FRENCH TARTS WEDDED WITH NUTELLA DREAMS e GOIABADA

Its a lazy Sunday noon , real noon , we were snuggling together ,almost asleep when we thought we'll take a break from "relaxing" and brew some cafe and we sure did , in our very fav princess cups (here), yeah they are pink:-), if u didn already guess.
And then sat down to some more cafe and tart time and after the wonderful time and some more love , went back to sleep, oh Sundays !

Not that every sunday is the same , but these tarts i would loveee to have everyday , n never tire , and since they arent too sweet , i think they would be perfect for savory too.
And we snuggled back and slept , till now , and thats my mom and me im talking about.
And these tarts i want to talk about and Dessert wars , in the month of love.

Oh how i loveee to say this all year thru but specially so now....

Loveee is sooo in the air * 365 and it feels wonderful.
And i loveee it to be there all year thru , to keep us warm and fuzzy and gay.
Thats not to say i aint a Valentine lover , im sure am , for me its Love's birthday , jus like mine:-) and urs :-)

Memories created around food are immensely special if they involve ur parents , even if u werent involved in the eating and this is another one that accompanies mommies stories and memories.

U bake a base , cool it , so it forms a little dip in the centre , and then fill some more with the same moussey batter and bake again:-)
Sure u can choose not to bake again and refrigerate it too:-)

Mine are more like Dark chocolate layer with Orange Zest and All spice and Creamy white chocolate layer , with vanilla and Poppy seeds , and with a hint of Hazelnut.

And i want to begin with a very quick and simple Vanilla butter cake , yeah with lods of vanilla everywhere, coz all good things begin with butter.

And to make things even better , i came up with this really wonderful salted butter glaze with a caramel or two , which is poured over the warm cakes and it soaks in for a beautiful flavor and delicious crust .

It has Apple and Spice and all things nice, u cant go wrong here ,can u!

CARAMEL TOPPED SEMOLINA CAKE@THANKSGIVING@DORIE@AMFT

I love stories, specially real stories, stories that bring a smile to ur face and glee to ur heart !

And if the story , is woven around food , its all the better!!

And around dessert, well i am all hugs and u'll have me donuts!

I love love love the story behind recipes @ Around My French Table, DOrie rocks yeah ,in every way!!

And this delicious story goes to French Fridays with Dorie ,started by Laurie here !

Hop by not only to catch all the deliciousness but join in too!

I love how her better half ,Michael and Dorie discovered this one!!

Her narration takes me to the Picturesque,often pictured {ofcourse}, Place Dauphine, in Paris ,at the tiny bistro, where they first had this and how she went on to master this one!!

I say master coz its absolutely fool proof, we find no cream of wheat nor farina here ,so i baked it with semolina and it was perfect!!

So i actually lived up to the name of this recipe!

Absolutely delicious and didn last even a day @ our non dessert eatin family , me being the lone dessert eater at most times!!

It reminds of goan sweets , lods of goodies with the portuguese influence, have semolina in them and i totally love them!

And this Cake reminds me of all those goodies + Pudim De Caramel, i ahve seen and helped mommy making caramel many a times !

The caramel was awesome and had a delicious lemony tang to it!

Even better , was when the next morning, my sweetest bro, who doesnt fancy desserts too muc, was looking for the lone star that was left, was so sorry that i had polished it off and he was actually eyeing it after breakfast and didn wanna over stuff himself!

Well lets begin this absolutely delicious dessert,shall we, its absolutely easy to put together!

To begin with ,u need to center a rack in the oven and preheat to 350 degress, do this , u have to, and keep a 8inch tin at hand or mini little ones and more as i did!!

Ok ,now lets begin with the milk, u need to bring 2Cups Milk to a boil with 1/4tsp salt .

And coz its around thanksgiving and coz spice and all things nice are so in now ,i love them in my kitchen , i added cloves , cinnamon and cardomon to the milk ,while warming!

The aroma ,fantastic!

And to make all things better , i added a whole vanilla bean too, hah look at those pretty tiny black babies!So good!

And a Dash of something else too, yeah a Dash of something from Provence....u have to guesss....

Yeah ur rite,lavendor, gorgeous lavendor buds , coz they are sooo goood!

Now ,forgive me my tendency to think that Lavender is so French , these buds come from Provence too!

Now this is the semolina i used ,u get a finer one too but i picked it from a grocery store and didn realize to ask for that too,but this one worked super fine,13rd cup of it, i dry roasted it a bit , till the raw flavor disappeared and then have to add it to the milk , thats brought to a boil , and the semolina added at the sign of the first bubble!!

Cooked it on low heat, stirring constantly so that it doesnt scorch!

Now if ur using cream of wheat/farina, u'll have to check the cereal box of details!

When its well cooked and nice take off the flame to cool , remember it thickens a bit later.

By the way i added lite cream and dry milk to the milk i used coz the recipe calls for whole milk and all i had was skimmed/toned milk!Worked pretty well!

And while the Farina/semolina cooled ,i simply couldn resist zesting in some lime there!

And now to begin making the caramel, in a saucepan ,u need 1/3rd cup sugar, 3 tbh water and fresh lemon juice!! I added some lemon zest too!

Use the zested limes/lemons to squeeze the juice , this ,makes for some absolutely ,lovely lemony caramel that jus has that zing!

Now before u begin making the caramel , do slide the pan/molds placed on a lined tray, into the oven!

This is a terrific tip , the warm pans ,make it so muc easier to spread the caramel ,specially since i was using many small molds and the caramel sets pretty fast!

I tried gettn pics of the caramel making but they are so good, u'll find better pics here!Actually these are the time ,i made this for Pudim de caramelo and they are shot with a cell phone:-)

Now u need to bring the sugar ,water lemon to a boil over high heat , after giving the saucepan a few nice swirls to moisten the sugar!

As the sugar begins to take a caramello color ,swirl a few times for even browning and heating!

And when its nice and a deep amber, pour into prepared molds/mold!

The now warm molds ,make ur moments here smooth and lets u gaze at the pretty caramel that has all those bits of zest in there!

Now though i did halve the basic recipe, i didn halve the caramel and still needed more , that means i f i make the full recipe as above , i will need to double the 1/3 rd cup sugar and water , and i love lods of caramel~Specially if its pretty~

Now after the caramel pans are ready, u need to beat in 2 eggs into the cooled Farina/semolina and add some chopped dry fruit!

Raisins are a first choice but i added Apricots , 2types , chopped!

One tangy and one sweet!

Ok known my love for playing around i couldn help adding a few chips ,chocolate {milk} and butterscotch to 2 of the molds!

Bake till everything puffs around and u have some mini caramel spurts around!Unmold while warm so u get all the caramel around!

Oh ,so lovely, the flavors hit the rite spot, in every bite{or gobble}

Bro, i sure wanna bake u lods of these stars soooonn..

Pretty ,pretty caramel, yeah thats what i got at the base of the flower mold, and it got curled ,around my fingers into a pretty pattern!

When Dorie named this Les Paresseux ,she meant for lazy people , u put the lovely roast in , set ur timer and take it out rite at dinner!!

Well for me ,while it was in the oven the first time round ,i was busy making Potato gratin ,and the second time Pumpkin flan and on both counts doing the dishes!!lol

This one has the home terrifically aromatic with bursts of very flavorful air,wafting around,so welcoming ,so delicious and fantastic, as a roast is!!
THis recipe is a total keeper and it comes together so beautifully too!!

We begin with seasoning a chicken [well cleant at that], inside out with salt and pepper.

Well, i stretched the salt and pepper a bit and seasoned it with some gourmet salts and peppers rite from Hawaiian red salt to Himalayan pink salt [exotic but jus a bit is enuf]....
